A Kiwi baker has taken to Reddit with a dessert that feels at once illegal, and the greatest thing on earth.

He’s somehow made a Kiwi classic recipe… even more Kiwi. 

“What have I created - innovation or abomination?” they titled the Reddit post with. 

“Yes, that is homemade lolly cake with pineapple lumps. And yes, it kind of goes hard,” he wrote. 

The baker knew the right way to do it: “It's just about frozen as well, so you get that satisfying crunch when you bite into the sweets, chefs kiss.” 

Naturally, the comment section turned into a battleground. 

Some were immediately on board. 

“GENIUS,” “I’ll allow it,” and “OMG this looks amazing, I’m gonna give it a go!” 

Others were harsher: “That’s not a lolly cake, that’s a lump loaf.” 

Brutal, but kinda fair? 

One user suggested they “copyright it”, while another offered garnish advice: “Chuck a couple glacé cherries on top for garnish, and you’ve got yourself a lump-a colada.”

“Oh f*ck,” said another. “I suddenly don’t want to be vegan.”

And unfortunately, some were just a grumpy southern bloke: “Saw that combo in Timaru 20 years ago.” 

The absolute legend did us all a favour and shared the recipe - so get stuck in! 

Ingredients:

• 1 packet – 250g malt biscuits (value is classic)

• 1/2 can of sweetened condensed milk

• 100g butter, melted.

• 2 packets (~250g of pineapple lumps - freeze then cut into halves if smaller size is desired)

• 1/2-3/4 cup dessicated coconut (1/4 cup goes into the mix)

• 3 tsp of fresh lemon zest (optional but highly recommend)

Method:

1. Prepare a baking sheet with parchment and set aside.

2. Melt the butter and side aside. 

3. Crush or process the biscuits into fine crumbs and place in the mixer.

4. Add lollies to the bowl, along with the melted butter, 1/4 cup of coconut, condensed milk and lemon zest. 

5. Mix together slowly until combined, then turn onto baking sheet.

6. Roll into a log shape then roll into coconut evenly, or sprinkle on top.

7. Refrigerate for several hours, or overnight ideally. Serve in slices.
